Cute Lil' Turtle Cake!

This cute little turtle mini-cake was the finale cake made by students enrolled in our Introduction to Cake Decorating for Youth (3 Class Series).

We have just rolled out our Fall/Winter 2010 schedule which includes, but is not limited to, a Barbie Doll Cake Class, Haunted Howl-o-ween Cake Class, and a Gingerbread House Class.

Kids boost their self esteem, improve their ability to follow instructions, hand-eye coordination, sharing and patience, and learn valuable skills they will use for the rest of their lives....and most of all ....it's fun!

Flower Power Cupcakes!

Our amazing students Amanda and Olivia created cute cupcake flower pots in our Introduction to Cake Decorating for Youth (3 Class Series). Amanda and Olivia both want to pursue pastry arts when they get older. They have been regulars at our Cookie Decorating Classes at Bubbles Playhouse in Staten Island, and it shows.

Here's how we made them:
Purchase a small flower pot at a craft store. Bake regular sized cupcakes and when cool, place them inside the flower pot. Use a No. 21 or 2D tip to pipe a swirl of buttercream icing on top of the cupcake. The flower center was made with a small ball of white fondant, scored with a toothpick. Dab a small amount of water on the center and affix to the flower.

Color a small amount of fondant pink, red, and green. Using a small flower cutter, roll out pink fondant and cut with the small flower cutter; roll out the green fondant and cut with a small leaf cutter.

Ladybug: Roll the red fondant into a small ball. Use a toothpick to score the head and body. Paint the ladybug with black food coloring.

Sugarlicious Gumpaste Peonies

I am a gardener and I just love, love, love to make sugar flowers. Like the peonies? I learned the basic structure from Chef Ruth Drennan and added my own twist. These flowers have been placed into Staten Island Historical Society's permanent collection. Now isn't that sweet! - Dina

Lynn and I believe that you can never stop learning-cake decorating and sugar art included! We are constantly challenging ourselves by attending workshops with some of the top cake designers in the Tri-State Area. The photo above was taken at Chef Ruth Drennan's Gumpaste Peony Class.

Lynn and I had a wonderful time at the Uncorked! Foodie Festival in Staten Island. We baked sugar cookies in ice cream cone and flower shapes and butter cookie hats and cookie pops. Our crafty kids made beautiful cookie hats at Bubbles Playhouse, May 2010. Just in time for Mother's Day.

Buttery Cookie Recipe

Cream together: 1 cup unsalted butter and 2/3 cup sugar
Beat in: 1 egg
Add: 1 tsp. vanilla, 1/2 tsp salt, 2 1/2 cup sifted all-purpose flour
Mix until all ingredients are well blended. Chill dough 3-4 hours before rolling.

Preheat oven to 350. Place a disc of cookie dough between two pieces of wax or parchment paper lightly dusted with flour. Roll out 1/4" thick and cut. [I used a large flower cutter and a round cutter for the hat]. Chill on the cookie sheet in the fridge until firm.

Bake about 10 minutes or until barely colored. Cool on rack for 2-5 minutes. Remove from cookie sheet and cool on a wire rack.

Butterflies & Ladybugs, Oh My!

We just love the Scouts and we had a wonderful time with the Daisy Girl Scout Troop in Annadale. We coordinated our Garden Bugs and Flowers theme to fit into the Daisies program. The kids especially loved making the lady bugs and using art brushes to apply neon sparkle dust to their dragonflies.

A Cookie-Tastic Time!

Yay! Our first cookie decorating class! Lynn and I were busy all week preparing for our first kids class at Bubbles Playhouse. This wasn't the first time we ever taught cake decorating but it was the first time we as fellow cake fanatics and friends collaborated as partners. Wow we have the best fun ever! We were interviewed by our local newspaper and got to share our enthusiasm and joy of cake decorating with the rest of the island.

Kids love playing with sugar! As the average household has gotten even more hectic, time relaxing with mom or dad kneading a sweet blob of cookie dough or baking a cake has become less and less. Cookie, cupcake, and cake decorating classes help kids' self esteem, motor skills, math skills, and social skills. At the end of each class, they have a sweet treat to share or savor all by themselves!
